Chiyo no Hikari Brewery
This winery in Myoko City, Niigata Prefecture was founded in 1860 and has been brewing sake ever since. Though its cellars are small, all bottles are of the ginjo sake variety and are brewed with the greatest care. Each sake features distinctive soft and light drinking characteristics.
Founded in year 13 of the Tenpo Era (1842), this sake winery has 175 years of history. Its motto is to “spare no time or labor in the pursuit of quality”. The brewery’s biggest feature is its simultaneous use of kimoto and yamamai brewing methods. The traditions and techniques of sake production, passed down over the generations, are alive and well in its cellars. The cellar is housed in a building constructed more than 100 years ago, using architecture that employs beam girders to withstand the weight of heavy snowfall in winter. Inside, you will see the original kettles and sieves utilized by the brewery, still in use today, at this site that has been featured in television commercials. In addition, free sake tasting is provided for exclusive varieties of sake by season and brewery.

Ayu Masamune Brewery
Ayu Masamune is located in the Saruhashi neighborhood of Myoko, one of the few areas in Niigata where snow is allowed to accumulate untouched. In the coldest parts of the season, snow can pile up to over two meters in height, enveloping the scenery of the entire area. When covered in snowfall, the brewer’s cellars are kept at a natural temperature of five degrees Celsius, an environment that provides the greatest possible stability to the sake brewing process, which is sensitive to even the slightest temperature variation.
Ayu Masamune was born within this natural environment by combining the very best selection of rice from Niigata prefecture with the reliable techniques of its master brewer. The beautiful gorge where the winery is located is blessed with the most pristine snow and water, providing the perfect setting for the passionate labor of true craftsmen.
